Mexican Monday: Vegetarian burritos

To mix up our weekly pub trips, Bella and I decided to make some veggie burritos last week. They are really easy to make and tasted great, if not that spicy... Have a go and let us know what you think!

Ingredients for 4 burritos:

Quorn mince (we used most of a small packet, so approx 200g)
400g kidney beans
Mushrooms
Guacamole
Salad
BBQ sauce
Cheese
250g rice
Your choice of spices - paprika, herbes de provence, chilli

The quantities are pretty much up to you, we had a LOT of cheese but maybe you'd prefer less. 





Method:

1. Cook the quorn mince in a large frying pan.

2. After ten minutes or so, add the kidney beans, mushrooms and any spices you're using. (Be liberal with the spices, you've got to give a lot of flavour to the mince).


3. Once the mince and veg is properly cooked, remove it from the heat and assemble your burrito! We went for the following order: guacamole, salad, mince, rice, cheese, BBQ sauce.
Don't judge the amount of cheese.
4. Attempt to fold it nicely like they do in Chipotle and then get frustrated and just eat with a knife and fork.
Basically restaurant quality!

All in all, these burritos made a really nice change to generic pub food, but in the future I'd like to add more Mexican spices.
