Chocolate chip banana bread

This is another of my go-to recipes. I made this a couple of weeks ago when we had a sprinkling of snow outside, and a couple of overly squishy bananas which needed using up.




The recipe is from this book, which I must have had for nearly 10 years now (I'm getting old...)

Anyway, it's a super simple recipe.


Chocolate chip banana bread

Ingredients:
2 large ripe bananas
1 egg
1 tablespoon of honey
50 g softened butter
75 g caster sugar
225 g self raising flour, sifted (I used a mixture of white and wholemeal)
3 tablespoons natural yoghurt
150 g chocolate chips (I used a mixture of dark, milk and white)
2 tsp Demerara sugar
¾ tsp cinnamon

Method:
1. Preheat oven to 180°c or 160°c fan. Grease/line a loaf tin.

2. Mash the banana until completely smooth. Then beat the egg and add this to the banana, together with the honey.

3. In a separate large bowl, cream the sugar and butter until pale and light. I use an electric hand whisk for this.

4. Add the banana mix to the sugar and butter mix. 

5. Sift flour and add this a third at a time, alternating between flour and spoonfuls of yoghurt. 

6. Pour into greased tin. Mix the Demerara sugar and cinnamon together, sprinkle this on the batter for a crunchy topping. Bake for 50-60 minutes.



The sprinkling of Demerara sugar and cinnamon on top gives it a good crunch.



This cake is great warm, especially spread with Nutella or chocolate spread!
