When life gives you lemons... make lemon drizzle cake

If a bank holiday weekend doesn't give you enough of an excuse to bake, then when does? I was inspired to make a lemon drizzle cake after discovering 5 lonely lemons in the fridge. Perfect with a cup of tea, this is so ridiculously easy to make!




Ingredients (original recipe here):

110g butter
170g self raising flour
4 tablespoons milk
170g caster sugar
2 eggs
Lemon zest and juice from 1 lemon
3 tablespoons icing sugar

Method:

1. Preheat the oven to 180°C / Gas 4. Grease and line a 23x13x7cm cake tin.

2. Beat the butter, flour, milk, sugar, eggs and the lemon zest (reserve the juice for the drizzle) until smooth and creamy. Pour cake mixture into prepared tin.

3. Bake in the preheated oven for 40 to 50 minutes. 

4. In a small bowl or jug, stir together the lemon juice and icing sugar. While still hot in the tin, pour the lemon juice mixture over cake.
I had tiny lemons so used 2 - they looked so cute!
It's best to leave the cake to completely cool in the tin before you try it - as hard as that is...
