Sweet potato veggie sausage rolls

Part 2 of the veggie sausage roll-off. This is a recipe I created myself as it's so difficult to find a good veggie sausage roll recipe. It's mostly simple ingredients and you don't have to make any pastry. I make these every Christmas for when family come round, however they work well all year round and are really good for packed lunches.





Sweet potato sausage rolls

Makes about 20 sausage rolls

Ingredients:
1 block puff pastry
2 medium sweet potatoes
Brown breadcrumbs (about 2 slices worth)
50g grated cheddar (I use extra mature)
1 tsp pesto (I use coriander pesto but any type would work)
1/3 tsp Cumin
1/2 tsp Cayenne pepper
Dash of Worcester sauce
Dried mixed herbs
Pinch of salt and pepper
Milk or egg to brush

Method:

1. Set oven to 180°C fan. Prick the sweet potatoes, place them on a tray and cook until soft, this took about 40 minutes and will vary on the size of the potatoes.

2. Once they are cooked, cut open and scoop out the flesh, transferring it into a large mixing bowl. Mash with a fork to ensure there are no lumps.


3. Add the breadcrumbs, cheese, pesto and all other seasonings. The mix should look a bit like sausage meat.


4. Now cut about a third of the block of pastry, and roll this into a long thin strip. Place some of the mixture down the middle of this. Then brush milk or egg along one edge of the strip and roll into one long sausage. Cut into pieces and prick the top of each with a sharp knife.


5. Place on a lined baking tray and brush with milk or egg. Then bake for 20 minutes.


6. You can leave them to cool but they're really good warm! Keep them in the fridge once fully cooled.

These are also great made into other shapes such as mini pasties or pies if you don't fancy the sausage roll shape.
